ஹல்வா

HALWA
(Kayal Special Halwa)

For 3 kgs

INGREDIENTS
Sugar – 1 ¾ Kg.
Ref. Flour – 500 Gms.
Ghee – 500 Gms.
Cashew nuts – 500 Gms.
Rose Essence – ¼ Bottle.
Cardamom – 3 Gms.
Lime – 2 Nos.
Colour (Green, Yellow, Red) – 5 Gms.
Almonds – 20 Gms.
Pista – 20 Gms.
METHOD
1. Make dough with flour and water. Take one white cloth. Tie in to the vessel. Put the dough on top of the cloth.
2. Pour little by little water. Mix well and take milk from the dough.
3. Throw it out the waste.
4. Prepare the milk in the morning. Remove the extra water in the evening. Thick milk will come.
5. Use the milk the next day morning for making halwa.
6. Take a thick-bottomed Iron Kadai. Dissolve the sugar with little water.
7. Once it dissolves, add the milk and limejuice. Cook until porridge consistency.
8. Remove 2/3 amount of Halwa and cook the 1/3 of Halwa using little ghee until thick.
9. Add some more ghee. Stir continuously and add few drops essence, stir well. Add the green colour & remove from Fire.
10. Grease the tray using Ghee. Put the oilpaper. Sprinkle some finely sliced almonds & Pista.
11. Add the cardamom Powder & Finely sliced Cashew Nuts into the Halwa.
12. Pour the Halwa in the tray
13. Cook the same method the balance 2-portion halwa mixture, using other two colours. Pour into layer by layer.
14. Cool it & cut the Halwa in the evening.
